    • 2 tbsp tamari sauce (optional)

    • 1 tbsp fresh ginger, grated

    • A pinch of Shichimi Togarashi (Japanese 7 spice)

    • Fresh herbs for garnish (e.g., parsley or coriander)

    1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, cooking until
      softened and fragrant.
    2. Add the mushrooms and sauté for 5-7 minutes until they release their juices and become
      tender.
    3. Add the ginger, broth, and tamari/soy sauce (if using). Bring to a simmer and cook for 15-20
      minutes to allow the flavours to meld.
    4. Season with Shichimi Togarashi. Garnish with fresh herbs before serving.
